Ingredients
  

  • 8 cups popped popcorn (plain or lightly salted)
  • 4 cups mini marshmallows
  • 3 tbsp unsalted butter
  • 0.5 cup rainbow sprinkles (plus extra for topping)
  • 1 tsp vanilla extract
  • 1 pinch salt

Method
 

  1. Prep your popcorn. Ditch the unpopped kernels unless you enjoy dental surprises. Toss it in a giant bowl.
  2. Melt the butter in a large pot over low heat. Add marshmallows and stir constantly. They’ll melt in 3–4 minutes.
  3. Turn off heat and mix in vanilla extract and a pinch of salt. Your kitchen will smell amazing.
  4. Pour the melted mixture over the popcorn. Gently fold to combine. Add sprinkles and mix until evenly coated.
  5. Press into a greased pan. Top with more sprinkles. Let cool for 30 minutes.
  6. Cut into squares and enjoy!

Notes

To customize, swap sprinkles with crushed cookies, cocoa powder, or edible glitter. For vegan options, use dairy-free butter and vegan marshmallows. You can also drizzle with chocolate or add a dash of almond extract for a birthday cake vibe.
