Ingredients
  

  • 12 oz smoked sausage, sliced
  • 8 oz penne pasta (or other shape)
  • 3 tbsp honey
  • 4 cloves garlic, minced
  • 1 tbsp soy sauce (low-sodium optional)
  • 1 tbsp apple cider vinegar
  • 0.5 tsp red pepper flakes (optional)
  • 0.5 cup reserved pasta water
  • fresh parsley, chopped (for garnish)

Method
 

  1. Boil the pasta until al dente, then drain and reserve 1/2 cup of pasta water.
  2. In a large skillet, brown the sliced sausage over medium-high heat until edges are crispy.
  3. Add minced garlic to the skillet and sauté for 1 minute. Then stir in honey, soy sauce, vinegar, and red pepper flakes.
  4. Return the cooked pasta to the skillet. Add pasta water and toss everything together until the sauce thickens and coats the pasta.
  5. Garnish with fresh parsley and serve immediately.

Notes

Store leftovers for up to 3 days in an airtight container. To reheat, add a splash of water to bring back the sauce’s stickiness. To freeze, store only the sausage mixture and add fresh pasta when ready. For variations: use chicken, shrimp, or tofu. Make it gluten-free or keto by swapping the pasta. Add bell peppers or spinach for extra veggies.
